Some news....

Since I've been stamping for about 15 yrs.....and Stampin' Up is my favorite stamping company, I've decided to sign up with them to sell their great products. I'm thinking of mostly for the discount as a Hobby Demo,,,but I will venture out with a party now and then...way out of my comfort zone for those of you who know me well. Scares me to death to even think about it..but will do my best.

Life, Stamping, & Holidays!

We are pretty much settled into the house we are renting. Craft room is no where near ready or organized, but working on it slowing.

I went to a stamping party yesterday and I worked on some Christmas cards......first time I've stamp in a YEAR. Depression is something that is hard to get past. I really think the party helped. I worked on my cards again today....and it felt GREAT. I need to update my address book, because I'm ready to get some envelopes addressed :) I hope this is a start to me stamping again on a regular basis.

Thanksgiving is just 4 days away...can you believe it! Friday we are going camping with great friends to Christmas tree hunt in the mountains. Can't wait to make more fun memories.

We're moving!

We're moving next week. Not looking forward to all the packing and cleaning though. Wishing it was all done. Monday can't get here fast enough.

Closing one chapter in our lives and starting a new one. A fresh clean start. Praying for less stress.

I will have my craft stuff in the house now...so hoping this will get me motivated again....haven't stamped since Nov. Depression hit me pretty hard when I found out I was going to lose my job in March due to the economy being so bad....the Co. decided to close our plant. Was a sad day. Had been there for over 16 yrs. Loved and I miss everyone a lot. I feel like I lost my family. :(

Here's to a new beginning....CHEERS!

Summer is here!

Summer is finally here....but most days are too HOT for me. But do enjoy the the days when it's only in the upper 70's low 80's!

I'm still in need of cleaning and reorganizing my craft room, it has become a catch all room over the past several months. :(

Boy, I haven't been on my blog in months....how sad is that? Pretty sad actually!

Well today, I have to say good-bye to a good friend, she passed away March 10, after getting lost in a horrible snow storm that came thru the area where she lived in Flagstaff, AZ. I'm going to miss her so much. Tanya Etter Morris,,,you will be missed by everyone that knew you....you brightened every room you walked in to. I will love and miss you forever! R.I.P.

Angel Wings

Health issues again...

I've been having health issues again. Plugged ears which is causing VERTIGO. I hope you never ever have to deal with that,,it's not fun. The world spins without your control. You feel like your on the TeaCup ride that never stops spinning. I've been to the Dr. 3 times now since May 20 for this issue. Medical bills just keep getting deeper and deeper in the pile.

Sour Cream Salsa Chicken

Boneless skinless chicken breasts
I used a bag of the frozen kind (around $6)
1 package of Taco seasoning
1 jar of salsa
2 tbsp of cornstarch
1/4 cup of sour cream

Put the chicken in the Crockpot, sprinkle taco seasoning over the top of the chicken pour entire jar of salsa on top put on lid and cook on Low for 6-8 hours (high around 4 hours)

When done remove Chicken to a plate. dissolve cornstarch in a small amount of water and pour in salsa, add sour cream and mix well.

I always put the chicken back in and let it simmer in the salsa. I also serve over rice. It's really good.

Cashew Chicken Salad Sandwiches

Cashew Chicken Salad Sandwiches

Ingredients:

  • 2 cups diced cooked chicken
  • 1/2 cup chopped salted cashews
  • 1/2 cup chopped red apple
  • 1/2 cup chopped peeled cucumber
  • 1/2 cup mayonnaise
  • 1/2 teaspoon Domino® or C&H® Granulated Pure Cane Sugar
  • 1/2 teaspoon salt
  • Dash pepper
  • 6 lettuce leaves, optional
  • 6 kaiser rolls or croissants, split

Directions:

In a large bowl, combine the chicken, cashews, apple and cucumber. In a small bowl, combine the mayonnaise, sugar, salt and pepper. Add to chicken mixture and toss to coat.
Place a lettuce leaf if desired and 1/2 cup chicken salad on each roll bottom; replace tops. Yield: 6 servings.

Taco Macaroni

Taco Macaroni

Ingredients:

  • 1 package (16 ounces) elbow macaroni
  • 1 pound ground beef
  • 3/4 cup chopped onion
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (10-3/4 ounces) condensed tomato soup, undiluted
  • 1 can (8 ounces) tomato sauce
  • 1 envelope taco seasoning
  • Shredded cheddar cheese

Directions:

Cook macaroni according to package directions. Meanwhile, in a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain.
Stir in the tomatoes, soup, tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened.
Drain macaroni; stir into meat mixture and heat through. Sprinkle with cheese. Yield: 6 servings.

Good news!

I got great news after having my stress test/echo this morning. My heart is good and strong!! I'm doing the happy dance. Now I can stop stressing about it.
