Apricot Baked Chicken

Apricot Baked Chicken

1/4 c. apricot preserves, divided (1/2 c. is better :)
3 tbsp. honey mustard
1/2 c. cornflake crumbs
2 tbsp. flour
4-5 boneless chicken breasts
1/2 tsp. garlic powder

Preheat oven to 350. Spray large baking dish with cooking spray. Combine 3 tablespoons preserves, honey mustard, cornflake crumbs, and flour in a small bowl; mix well (mixture will be thick) and set aside. Arrange chicken breast in single layer in dish; spread chicken on both sides with remaining preserves. Sprinkle with garlic powder. Spread apricot mixture on chicken and bake 20 to 25 minutes. Turn broiler on high heat; broil chicken 45 to 60 seconds until lightly browned and crisp.
Serves 4. Enjoy!

Well, I did some stamping with a friend yesterday,,,we worked on Valentine candies. I also stamped 8 Christmas cards as well. Trying to get a head start on those for this yr.

Saturday.

I did do a little stamping today...Christmas images for my Christmas cards for this year...I'm gonna try to get them done early so I can work on more gift ideas closer to the holidays. I stamped about 38 images...so that's a pretty good head start...will have plenty of time to color them in. :)

I'm gonna go to a friends house tomorrow and stamp a little too. Maybe get some coloring done on the images for the cards.

My friend is going thru a tough time right now,,and needs something else to occupy her time,,so what better than to STAMP!!

Monday

Thank goodness, the snow didn't fall for very long and the temperatures warmed up to about 42 degrees,,,so the driving commute to work should be good. I'm going back to work after having 2 full weeks off and a couple days the week before that (snow days). Thankful that I have a job, but not ready to go back....dragging a bit this morning...sleep deprived!

It's SNOWING again :(

The white fluffy stuff is falling from the sky again...I just want to CRY!

Dreading tomorrow...

I'm really dreading going back to work tomorrow....the past 2 weeks have flown by and I really didn't get much done with the snow. I'm thankful that I still have a job to go to, because layoffs happened just before Christmas, corporations are wonderful that way ya know.

I was going to go stamp with a friend today, but I didn't sleep well and woke with a bad headache,,,anxiety I'm sure of what tomorrow brings....WORK. Hope I sleep tonight.

Triple-Chocolate Cherry Bars

Triple-Chocolate Cherry Bars

1 Box Betty Crocker Supermoist chocolate fudge cake mix
1 can (21 oz.) cherry pie filling
2 eggs, beaten
1/2 bag (12 oz. size) miniature semisweet chocolate chips (1 cup)
1 container Betty Crocker Whipped chocolate frosting

Heat oven to 350 degrees. Grease and flour 13 x 9 glass pan.

In large bowl, gently mix dry cake mix, pie filling, eggs and chocolate chips with rubber scraper, break up any undissolved cake mix by pressing with the scraper. Carefully spread in the pan.

Bake for 35-40 minutes, or until toothpick inserted in the center comes out clean. Cool completely, about 1 hr. Frost with frosting.
